A house earns the right to a crest two ways. It grows what it can grow with absolute discipline, and it refuses to bottle anything else under the same name unless that thing has been held to the same discipline. Calveria operates on both tracks at once.

Track 01

The Single Origin. Curated. Exclusive. Double Gold.

Our flagship Arbequina is drawn from a thirty mile radius around a unique volcanic California anomaly - chosen, after years of evaluation, from the best of the state's properties - and recognized with Double Gold for its Arbequina EVOO. We work this estate exclusively: a single varietal, farmed row by row, pruned by hand, walked before sunrise, cut at the first blush of véraison.

The fruit travels to the mill in hours, never days. The press runs cold, below twenty-seven degrees. The oil is bottled unfiltered, unblended, and untouched by the convenience of time. This is  the standard against which everything else is measured.

If a vintage from the estate does not meet that standard, the vintage is not bottled. The fruit goes elsewhere; the labels stay in the drawer; the year is recorded as a year we declined to release.

The Negociant ProgramCurated, estate by estate.

Beyond our single flagship origin, we run a continuous, methodical evaluation of California's finest properties - and, for our infusions and vinegars, of artisan millers and acetaie across the Spanish Levant, the Sierras de Andalucía, and the lofts of Modena and Reggio Emilia.

When a candidate clears the program, the estate or acetaia is named on the back label of the resulting release, lot by lot. When a candidate does not - and the majority do not - we move on quietly, without announcement.

The crest does not extend automatically to partner harvests. It must be earned, season by season, against the same reference set as our own.

The Reference Set

Five lines.Every line must clear.

Each candidate estate, miller, or acetaia is assessed across the criteria below. Only the candidates that satisfy every line move forward.

The Crest

One rule.It does not bend.

If a vintage or a partner's harvest does not meet our standard, it does not bottle under the Calveria crest. Not at a discount, not as a second label, not as a limited edition. The crest is the standard; there is no version of it we are willing to weaken.

What our clients are buying is not the year, not the estate, not the acetaia - but the assurance that whatever happens upstream of the bottle, the bottle itself has been earned.
