The Curation

We are auditing heritage cellars.

The Selected Reserve is an active curation, not a finished product. Our cellar team is currently working through a short list of traditional, heritage acetaias - multi-generational houses operating wood batteries the way our estate operates its mill: by hand, by patience, and by an internal standard older than any market.

We are tasting against a precise specification. The reserve we choose must carry a syrupy density that clings rather than runs. It must hold the complex sugar architecture only long barrel aging can give - dark fig, dried cherry, the soft char of toasted oak - and at the same time keep the bright, lifted acidity that allows it to cut, balance, and finish. Density without weight. Sweetness without sag. Acidity that arrives clean.

If a candidate cellar is close, but the brightness falls a beat short - or the density skews syrup rather than structure - we move on. The bottling will carry the Calveria crest only when one acetaia meets all three coordinates at once.

The Culinary Synergy

The Selected Reserve is not a stand-alone vinegar. It is being composed explicitly to partner the rest of the Calveria table - the Single Estate Arbequina on one side, and the upcoming Gastronomic Infusions Collection on the other.

Beside the Arbequina

A controlled drop completes the inaugural Arbequina the way a squeeze of citrus completes a fish - sharpening structure without disturbing the oil's restrained, peppery finish.

With the Infusions

Built to cut the rounded, savory body of the Roasted Garlic and the bright, citrus lift of the Meyer Lemon, so neither blend ever reads heavy on the plate.

On the Plate

Essential for finishing complex reductions, dressing artisanal charcuterie, and lifting fresh garden pairings - tomato and burrata, stone fruit and aged cheese, raw vegetables under good salt.

The Reservation

Reserve Your Allocation

The Selected Reserve cannot be scheduled. Production is dictated entirely by barrel availability at the cellar we choose - the volume of any given bottling is bound to how much aged stock the acetaia is willing to release. Reservations are settled by pre-payment at the time of order; bottles are bound to your name and shipped the moment the chosen cellar releases the aged stock.
