The Vintage

The inaugural Calveria pressing was cut early - deliberately early - at the first blush of véraison, when the Arbequina is still green-shouldered and the phenolic curve is at its narrow apex. The fruit is drawn from a single, double-gold-winning California origin that we curated, exclusively, from the best of the state's properties. We refused the convenience of blending and accepted the lower yield that early harvest demands. What remains in the bottle is not a season's averaging, but its most articulate hour: a single-varietal Arbequina chosen for its elegance, its precision, and a complexity that reveals itself in measured layers rather than in a single declarative gesture.

The Nose

Open the bottle and the origin arrives first. Green apple skin and bruised banana leaf lift from the glass, followed by the chalk of raw almond and the cool, vegetal signature of fresh-cut meadow grasses. Beneath those primary aromatics sits a quieter set of cues - wet stone, white tea, a passing whisper of green tomato vine - the kind of layered, restrained nose more commonly associated with a young grand cru Chablis than with a finishing oil.

The Palate

The entry is silken - almost buttery - and the mouthfeel is layered: oil that coats without weighing, that broadens before it sharpens. At mid-palate it turns bright and herbaceous: butter lettuce, green almond, and a savory note of fresh herb stem rise in succession. Body is medium-plus; structure is taut. This is an oil with architecture, held in the same disciplined suspension between fruit, bitterness, and minerality that one expects of a serious bottle of wine.

The Finish

The finish is the signature: a clean, ascending white pepper at the back of the throat - refined rather than aggressive - that arrives in two measured beats and then lengthens, slowly, into wild fennel and a long herbaceous fade. That pepper is not heat. It is the audible signal of high polyphenol vitality - oleocanthal and oleacein, the markers of an early-harvest oil - present in quantity, yet calibrated so as never to overpower delicate fish, raw preparations, or a fine vegetable course.
